A Freebie For You!

Some of you may remember that I have been working on a cookbook…for several years now. Ugh. Actually, it’s been in the back of my mind for 30 years or so! I’ve been collecting recipes, making notes, and saving the best since I was around 17 years old!

Over the years I have tried and tried to make a homemade sweet and sour sauce and I have a stack of recipes with notes all over them! None of them were ever quite right. One was too sweet, or one was too tangy. One might have had too much ketchup (for color) and one might have had too much onion and not enough bell pepper. You get the idea.

Today, I decided to give it another shot. I took all the notes I wrote on all the other recipes and put them all together in my feeble mind. I wrote my own recipe and made Instant Pot Sweet and Sour Meatballs. I even made a batch of sauce to save for later! The sauce was the best I’ve ever made!

It may be a bit too sweet for you, or it may have too much onion or too many chunks of pineapple. But the thing about recipes is that you can tweak them to your own taste!

Here’s my recipe and I hope you like it. Call it a freebie before my cookbook is finished!

~~~
Sweet and Sour Sauce
1 (20 oz) can pineapple chunks, undrained
1 green red or green bell pepper, cut into 1-inch pieces
1/4 onion, cut into 1-inch pieces
3/4 cup lightly packed brown sugar
1/4 cup rice vinegar
4 tbsp ketchup
2 tbsp soy sauce
1 1/2 tbsp cornstarch in 2 tbsp water, to make slurry
Add all ingredients to a medium saucepan and bring to a boil. Let simmer until the vegetables are tender.
Add cornstarch slurry and stir constantly, until thickened to desired consistency. Let the sauce cool before storing it in an airtight container in the refrigerator for up to 2 weeks. Use it as a dipping sauce or with your favorite sweet-and-sour recipe.
If you want to make Sweet and Sour Meatballs, just add frozen meatballs during cooking but in the end, you may need a bit more cornstarch slurry. If you want to make this in the Instant Pot, add everything to the pot except for the cornstarch slurry. Cook on manual or high pressure for 7 minutes. Manually release pressure when the timer goes off. Add the slurry to thicken. Serve over rice.
If you like Sweet and Sour Chicken, add cooked (and still hot) breaded chicken bites at the very end and stir until coated, then serve over rice.
Well, I hope you like this recipe! Let me know what you think if you try it!
Friday’s Funnies – My Faves This Week – August 4, 2023
Friday again. The days go by so fast…but not fast enough considering this sweltering heat! I cannot wait until wintertime. How’s the weather in your neck of the woods? I hope you’re cooler than I am.
This past week I have been back to work on my cookbook. I just can’t seem to stay with it for long enough to get the recipes typed out! I always lose my motivation after a few months. I should have had it done by now. Little by little, it will get done!! Do you have a project that has taken forever to finish?
I hope you enjoy this week’s funnies. I didn’t get as many saved throughout the week as I normally do. I hope you get at least a smile…
Friday’s Funnies – Theme: Signs – July 28, 2023
The last couple of weeks have been miserable. I lost a furbaby (RIP Honey Bear) and another furbaby (BobCat) caught a URI. I think we brought it back from the vet’s office. It seems like shit has to happen all at once these days. BobCat is feeling better now that he has seen Dr. Missy, who gave him a long-acting antibiotic injection as well as an injection of steroids to reduce the inflammation in his nose. Poor little guy was blowing snot bubbles and sneezing all over the place! Dr. Missy put some ointment in his eyes to lubricate them. He was pretty drippy and yucky. Most of his symptoms have subsided, thankfully. I can’t wait for him to get back to his silly, playful self!
Last Friday, I intended on posting Friday’s Funnies but we had just lost Honey Bear 2 days prior and my heart was broken. I just couldn’t bear to see anything funny as I was not in a laughing mood. I’m sure you’ve all been there. Some people say, “Oh, it was just a cat,” or “It was just a dog.” Nope. Pets are part of the family. I lost a member of my family.
Anyway, onward and upward. Here’s this week’s funnies, theme “Signs” and I just can’t believe some of the signs I have collected! Hilarious! I hope you enjoy the collection!
Well, there you have it. My faves are Danger Ahead and Duck, and the Go Away Go On Git sign reminded me of my mom. When we were kids she would do crafts as Christmas gifts and to keep us out of her craft area she’d hang a sign on the door that said Keep Out This Means You! It always made me laugh.
I hope you enjoyed this collection! Have a super weekend and remember, if the ground is too hot for you to walk barefoot on then it’s too hot for your furbabies! And please don’t leave children, the elderly, or pets in a hot, parked car! It could be deadly.
Until next time,
aunt-debbie
Uh Oh, It’s The Po-Po!
Last week was hectic. After losing my Honey Bear to a tumor, BobCat decided to get sick. He had a fever, and the sniffles, snorts, and sneezes. Our vet can’t see him until Wednesday BUT BobCat is feeling much better. He’s eating and drinking, using the litter box, and the sniffles, snorts, and sneezes are down to a minimum. So, my stress level is slowly coming down.
Last week, in the midst of trying to give Honey Bear a few days of feeling better, I made a run to Walmart for a curbside pickup. I was getting mostly canned cat foods with gravy, and pouches of broth and gravy, to entice Honey Bear into eating. On the way, MODOT (Missouri Dept. of Transportation) was working alongside the highway, on the left side. They were spraying weeds and unwanteds on the right of way and on the fence line. There was a State Trooper parked keeping an eye on things. I thought to myself, remember to watch yourself on the way back. Simple enough, right?
Well, I have a disabled placard for parking hanging in my car. I have a bad habit of just leaving it hang from my rearview mirror, which is against MO law. So, I took it down, having a feeling that the patrolman would pull me over, sure as shit. Thinking ahead, you know?
On the way back, I saw the patrolman first and I slowed down. MODOT was just ahead of him, still spraying. I didn’t want to get in the way of the sprayers so I moved over to the left, which took me over the center line just a little. Next thing I knew, the patrolman’s lights were on and coming up behind me. I thought, surely he’s not coming for me. I pulled over to let him pass…and he pulled over right behind me. Shit Fuck Shit, I said out loud to myself. What the hell did I do?
The patrolman was pleasant and asked for my license and proof of insurance. I handed those items to him and I asked, “Did I do something wrong?” He replied, “You’re not aware of what you did?” I said, “No, sir.” He told me that I went over the center line of the highway and asked why I did that. I said, “Because I didn’t want to get in the way of MODOT.” He very nicely informed me that MO law requires that a vehicle slow or stop when there are oncoming vehicles before moving over the centerline. In doing what I did, I caused oncoming traffic to have to move onto the shoulder. I’m thinking to myself that it wasn’t my fault the oncoming traffic moved over. They were far enough ahead that they didn’t have to do that. I didn’t say that, because I’m not going to argue with a patrolman! I told him, “I should have known better. When people are testing for a driver’s license, anytime you cause another driver to do something he wasn’t going to do in the first place, they flunk you automatically.” He nodded in agreement, and said, “Hang tight, I’ll be right back.” He walked back to his patrol car and after several minutes passed I thought, “Shit. He’s writing me a ticket.” I wanted to make fun of his Dudley Do-Right hat and his sissy boots but I didn’t want to get shot. Haha!
1024px-Police_Car_Missouri_Highway_Patrol_(15177420427)
He came back to the car, handed my license and proof of insurance back to me, and explained to me that MODOT had reported that people were doing exactly what I had done and were afraid there would be an accident. They asked that the highway patrol send someone to keep an eye out. He was very nice about the whole thing. He sent me on my way with a warning. Boy, was I relieved! I thanked him and told him it wouldn’t happen again.
I think it helped that I have never had a ticket in my entire life, not even a parking ticket! I had only been pulled over twice prior to this, once in California and once 30 years ago here in Missouri. Having proper insurance and driving a car with updated plates with no red flags helped as well. That’s probably why it took him so long! He was running my license, insurance, plates, the whole nine yards.
I drove away wiping the sweat off my brow. Thankfully, I have a funny story to tell about how I fucked up instead of a ticket to have to pay. I’d never hear the end of that!
Goodbye, Honey Bear
Honey Bear took her last ride yesterday. I wish I could have made her feel better, even if only for a few days. I couldn’t watch her wither away and suffer.
I was never sure how old Honey was when she came to us in 2017 but our vet at that time said she was under 5 years old. I decided she was about 3 years old, so about 9 this year. It was the evening before my birthday in July of 2017. This is going to sound strange, but I felt that my Fuzz led her to me. I had just lost Fuzz a few months prior. The night before my birthday this year is when she first showed signs of being sickly. A week later, she’s gone.
Thanks, everyone, for the sympathy and condolences. I appreciate all of the moral support through the last week. I am mentally and physically exhausted. It’s hard losing a furry member of the family. Even the other furbabies know there’s something off.
RIP Honey Bear 2017-2023 (1)
